Ingredients
- 20-25g Fresh Pasley
- 100g Chopped onions
- 20g olive oil
- 1 tsp cumin
- 1 tsp Ground Turmeric
- 1100g Water
- 2-3 veg stock cubes
- 300g red lentils
Method
- Finely chop parsley. remove 1 heaped tsp chopped parsley and set aside.
- Roughly chop onions.
- Heat oil inpan.Add onions and sauté for 5 mins – add parsley, cumin and turmeric continue to sauté another 2 minS.
- Add water, vegetable stock and lentils thenbring to boil then simmer for 25 mins until cooked.
- Blend with stick blender.
- Transfer to soup bowls, garnish with reserved chopped parsley and serve immediately.
