Red Lentil Soup

A warming, nourishing red lentil soup that’s simple to make and full of flavour. Quick to prepare and packed with goodness, it’s a lovely recipe to add to your weekly menu.

Ingredients

  • 20-25g Fresh Pasley
  • 100g Chopped onions
  • 20g olive oil
  • 1 tsp cumin
  • 1 tsp Ground Turmeric
  • 1100g Water
  • 2-3 veg stock cubes
  • 300g red lentils

Method

  1. Finely chop parsley.  remove 1 heaped tsp chopped parsley and set aside.
  2. Roughly chop onions.
  3. Heat oil inpan.Add onions and sauté for 5 mins – add parsley, cumin and turmeric continue to sauté another 2 minS.
  4. Add water, vegetable stock and lentils thenbring to boil then simmer for 25 mins until cooked.
  5. Blend with stick blender.
  6. Transfer to soup bowls, garnish with reserved chopped parsley and serve immediately.
