Ingredients
- 80g of oats
- cinnamon (to taste!)
- 20g desiccated coconut
- 2 eggs
- 100ml oat milk
- 1 apple (cut into small chunks)
- honey
- coconut oil (for greasing)
- natural/greek yoghurt
Tips
To make this recipe vegan, swap out the eggs for 2 mashed bananas and omit the yoghurt to serve.
Method
- Pre-heat the oven to 180°C
- Add the oats, as much cinnamon as you like and desiccated coconut to a bowl
- Gently whisk 2 eggs and add to the oat mixture
- Add the oat milk and apple to the oat mixture
- Combine well
- Add a big dollop of honey
- Grease an oven proof dish with coconut oil and pour in mixture
- Add more cinnamon if desired
- Add to oven, bake at 180°C for 35-40 minutes
- Serve with natural or greek yoghurt and honey
- Enjoy!
