Ingredients
- 350g courgettes
- 200g soft brown sugar
- 125ml olive oil
- 3 large eggs
- 1 orange (grated zest)
- 1 tsp vanilla extract
- 100g sultanas
- 300g self-raising flour
- 1 tsp baking powder
Method
- Lightly oil and line a square tin with baking paper.
- Thinly grate the courgettes and squeeze out as much liquid as possible. You don’t want a soggy cake!
- Combine the courgettes with the sugar, oil, eggs, orange zest, vanilla and sultanas.
- Fold in the flour and baking powder until they disappear, but don’t overmix.
- Pour the mixture into the tin and bake in a pre-heated oven at 180 C for 50 minutes.
- Remove from the tin and cool before enjoying 🙂
