Courgette and Orange Cake

Try this delicious courgette and orange cake enjoyed by guests that joined our Energise and Empower Spinvata Retreat.

Ingredients

  • 350g courgettes
  • 200g soft brown sugar
  • 125ml olive oil
  • 3 large eggs
  • 1 orange (grated zest)
  • 1 tsp vanilla extract
  • 100g sultanas
  • 300g self-raising flour
  • 1 tsp baking powder

Method

  1. Lightly oil and line a square tin with baking paper.
  2. Thinly grate the courgettes and squeeze out as much liquid as possible. You don’t want a soggy cake!
  3. Combine the courgettes with the sugar, oil, eggs, orange zest, vanilla and sultanas.
  4. Fold in the flour and baking powder until they disappear, but don’t overmix.
  5. Pour the mixture into the tin and bake in a pre-heated oven at 180 C for 50 minutes.
  6. Remove from the tin and cool before enjoying 🙂
