Braised Red Cabbage

Discover a simple and delicious braised cabbage recipe that brings out the natural sweetness of the vegetable, perfect as a comforting side dish for any meal.

Ingredients

  • 1 red onion
  • 2 tbsp butter
  • glug of olive oil
  • 1 large garlic clove (crushed)
  • 1 small head red cabbage, cored and thinly sliced
  • 1 tbsp soft brown sugar
  • 1 orange (juice and zest)
  • 1 cinammon stick
  • 1 tbsp red wine vinegar
  • 150ml port
  • 150ml water

Method

1. Finely chop the red onion
2. In a large pan, melt the butter and olive oil on low heat
3. Add the onion and cook gently until soft
4. Add the garlic
5. Add zest of 1 orange along with the cinnamon stick
6. Add the soft brown sugar
7. Add cabbage to the pan along with the red wine vinegar and port
8. Add the juice of 1 orange
9. Add the water
10. Cover and simmmer for 40 minutes
11. Add to the oven at 180°C for 15 minutes
12. Salt & pepper to taste
